Cook food over fire

Roast food on sticks and hot stones so it is safe to eat and tastes good.

First, you need: Keep a fire day and night

Cooking is not just about taste. Heat kills the germs and parasites (tiny creatures that live in raw meat and can make you very sick) that raw food carries. It also breaks food down so your body gets more energy from every bite. A cooked meal feeds you better and risks you less β€” that trade never stops being worth it.

The one rule that matters most: cook over coals, not over flames. Flames are wild β€” they blacken the outside of food while the inside stays raw, and they coat everything in soot. Coals, the glowing orange bed a fire leaves behind, give steady, even heat you can control. You light a blaze, then wait for it to become a stove.

The second rule: fire safety does not relax because dinner is involved. Clear the ground to bare dirt for two big steps around. Check the wind β€” if it can carry sparks, cook another time. Never walk away from flame or coals, even "just for a minute." When you finish, drown the fire, stir the wet ash, drown it again, then hold the back of your hand near it β€” any warmth means it is not out.

  1. Prepare the ground first. Bare dirt two big steps around, nothing overhead, wind checked β€” two minutes that prevent the unfixable mistake.
  2. Rake a bed of coals to one side of the fire. Drag glowing lumps into a flat, even layer. Keep a small fire on the other side β€” your coal factory, making fresh coals as the bed fades. This two-zone setup is the whole kitchen: one side makes heat, the other serves it.
  3. Test the heat with your hand. Hover your palm where the food will sit and count. 4–5 seconds before it hurts: right for roasting. 2–3 seconds: very hot β€” good for a quick sear (browning the outside fast), easy to burn everything else. 7–8 seconds: gentle β€” too slow to cook through. Your palm is a thermometer you always carry.
  4. To roast on a stick: sharpen the green stick, peel the bark off the tip (bark tastes bitter), and skewer the food along the stick's length β€” through twice, in-out-in, so it cannot spin or slide. Prop or hold it 15–25 cm above the coals β€” about a stretched hand-span.
  5. Turn the food every minute or two. Slow, even turning is the whole skill. Listen: a soft steady sizzle means cooking; loud hissing and fast darkening means too hot β€” lift it a hand higher; silence means too cool β€” lower it. Smell it too: wet and flat at first, then rich and toasty as it browns.
  6. To cook on a stone: stand the flat, dry stone on edge at the border of the fire β€” close, not in the flames β€” and heat it slowly for 30–60 minutes, so any last dampness escapes as gentle steam instead of trapped pressure. Drag it out with two sticks, set it flat, brush off the ash with a leafy green twig, and cook on it like a pan. Flick a water drop on top: if it dances, the stone is ready. Good for thin meat, fish, eggs, and flatbread β€” and it stays hot long after leaving the fire.
  7. Roots and tubers (potatoes and their wild cousins β€” but only roots you can name as safe to eat: cooking kills germs, it does not remove plant poisons) go into the ash at the edge of the coals β€” ash, not the orange centre, or the skins char before the middle softens. Bury halfway, turn every ten minutes. Done when a sharpened twig slides in with no push-back β€” 30–60 minutes; a fist-sized root takes the full hour.
  8. Check that meat is truly done β€” every piece, every time. Cut into the thickest part, to the middle: no pink anywhere, flesh firm, juices running clear, not red or cloudy. On anything with a bone, check right against the bone β€” the last place heat arrives. Fish is done when it turns from glassy to solid white and flakes at a touch. No one of these signs is proof by itself β€” juices can run clear a little before the middle is truly done β€” so demand all of them together. When in doubt, cook longer: a dry meal is a small loss, and the germs have no colour, no smell, and no mercy.
  9. Afterwards, put the fire fully to sleep. Drown, stir the sludge, drown again, feel for warmth with the back of your hand. Grey ash hides live coals for hours; a dead-looking bed can relight in wind.

How it works

Why coals beat flames. A flame is not a thing β€” it is a place: the spot where hot gases boiling out of the wood meet air and burn. Those gases rise in ragged, flickering tongues, fierce here, cool there, and the parts that fail to burn completely stick to your food as black soot. Cooking over flame is cooking on a stove that changes its mind every second and spits black paint β€” that soot β€” at your dinner. Coals are the opposite: the wood's charcoal skeleton, glowing steadily as it burns from the surface inward β€” one even temperature across the whole bed, a hotplate made of light. That is why a baker waits for the oven, not the blaze: it is never the fire you want, it is the steady heat it leaves behind.

Heat that travels like light. Glowing coals cook mostly by radiant heat β€” invisible rays, cousin to light, flying in straight lines from every glowing surface to warm whatever they strike. You feel them as the sting on your palm in the hand test. And like light, they only warm what they can strike. Think of what the food "sees" looking down: held low, glowing coals fill its whole view, so rays hit it from every direction; lifted, the bed shrinks to a small orange patch far below, most rays fly past instead of landing, and the heat falls away fast β€” a hand higher can be the difference between searing and gentle roasting. That steep falloff is your temperature dial. Height above the coals is not a detail β€” it is the knob.

Why "cooked through" is the only "cooked." Heat kills germs and parasites, but only where it actually reaches β€” and heat crawls into meat slowly, from the outside in. The surface can sizzle while the centre sits at raw temperature. So every doneness check is one question asked three ways: did the heat reach the middle? Juices run clear because heat has firmed the flesh and cooked the redness out. No pink at the bone because the bone is the finish line of the heat's journey. Cut thick pieces open because your eyes can only inspect what they can see.

Why stones cook and wet stones kill. A stone is a heat battery: slow to charge beside the fire, slow to spend afterward β€” a patient, forgiving pan. But charge a stone with water hiding in its pores and the water becomes steam β€” the same water, now a gas, demanding enormously more room β€” and rock does not stretch. The battery becomes a bomb. Dry stone from high ground: pan. Wet stone from the river: shrapnel.

Why the stick must be green. A living branch is about half water by weight. Over the coals that water soaks up the heat and keeps the wood below burning temperature, so the skewer survives the very heat that cooks your food. A dry stick has no such shield β€” it is thin firewood holding your dinner.
