Cook and boil in clay pots
At last: soup, stew, and easy safe water straight over the fire.
Boiling changes everything. Before pots, you could roast food over flames, and that was about it. Roasting is fierce and wasteful: the outside chars while the inside stays raw, juices drip into the ashes, and half of what the land offers β hard grains, dry beans, bare bones β barely counts as food at all. With a pot that sits in the fire, you can boil water safe to drink, simmer tough roots and grains soft, and make soup that pulls every scrap of goodness out of bones and greens. One pot turns the same forage into more meals, safer meals, and meals a toothless elder or a small baby can eat. No tool changed what humans could live on more than this one.
Your pit-fired pot is unglazed β no glassy coating β so its walls are slightly porous β threaded with holes too small to see β like very hard bread. That is mostly a gift: the first cooking seals the pores, and the same pores keep stored water cool in summer. The pot asks only one thing in return: never surprise it. Clay that is hot in one spot and cold in another tears itself apart β the same law you learned at the firing pit, and it never stops applying.
You need
- A fired pot β one that rings like a bell when tapped, from "Fire pots in an open pit". A dull clunk means a hidden crack β cracked clay, like a cracked bell, cannot ring true; keep that one for dry storage, not fire. A rounded bottom is best: no corners for heat to attack, and it twists snugly into a coal bed. About two hands wide (20β25 cm) with finger-thick walls is a fine everyday size.
- A steady bed of coals β coals, not roaring flames. Let a good fire burn down to a glowing orange bed, about half a forearm deep (15 cm). Flames lick one spot and crack the pot; coals give broad, patient heat. Start early β a proper coal bed takes an hour.
- Three fist-sized stones, or a scooped hollow in the coals β to hold the pot upright. Dry stones from high ground only, never from a stream or lakeshore: river stones can hold water deep inside, and in the fire that water becomes trapped steam and the stone bursts like a shot.
- Something to stir and lift with β a long wooden spoon or stout green stick, and two thick pads of folded leaves, bark, or hide. Make the pads before you need them, not while dinner burns.
- Clean water and food β whatever you have. Even things you could not eat yesterday β dry beans, hard old grain, a picked-over carcass β are food now.
Steps
- Season the new pot first. Fill it with water and a handful of starchy food β grain, flour, or mashed starchy root β and bring it slowly, in stages, to a gentle simmer for about an hour. You are cooking a thin porridge on purpose: the starch swells and works into the tiny pores of the clay, plugging them from inside like mortar in a wall. A new pot sweats or weeps through its walls the first few uses and may taste earthy; both fade as the pores seal. One good seasoning, and the pot is watertight for a lifetime of soup.
- Warm the pot before every use β heat pot and contents together, from cold. Cold water and food into the cold pot, then an arm's length from the fire for a few minutes, then the edge of the coals, then in. A pot that climbs to heat in stages lives; one thrown into the fire dies with a single loud tick.
- Never heat an empty pot. Water inside can never get hotter than boiling, so a full pot regulates its own temperature. An empty pot has no such guardian; it overheats in patches and cracks.
- Nest it beside and among the coals β not in flame. Set it on your three stones with coals raked between them, or twist its rounded base into the coal bed until it sits firm. Pile coals up the sides to about a third of the pot's height: heat should come broadly from the sides, not one furious spot underneath. If flames climb the pot, rake them away β flame starts the coal bed, coals do the cooking.
- To make water safe: boil it hard. A full rolling boil β big bubbles breaking across the whole surface, not a shy fizz at the edges β held for a full minute (three minutes above roughly 2,000 m in the mountains β thinner air there lets water boil at a cooler temperature, and a cooler boil needs longer to finish the same killing). That kills the invisible living things β germs β behind most stomach sickness. It removes no mud, salt, or poison, so start with the clearest water you can, let cloudy water settle, and pour off the top. And notice the quiet luxury: a potful purifies itself while you weave, chip stone tools, or mind children.
- To make soup or stew: slow things first, quick things last. Water in, then the patient foods β cracked bones, tough roots, dried meat, hard grain, beans β at a gentle simmer: small lazy bubbles, the surface trembling but not leaping. Beans want the longest β first a hard rolling boil for a good ten minutes to break their raw poison, then a few hours' simmer until every one is soft through; half-cooked beans, or beans held only at warm heat without a real boil, still hold that poison, and gentle warmth alone can even make it worse. Bones give their best after two or three hours, when the broth turns cloudy and rich and the joints slip apart. Greens, soft vegetables, and fresh fish go in only near the end.
- Stir, and mind the bottom. Thick porridge scorches where pot meets coals, and burnt starch grips unglazed clay. Stir now and then, scraping gently along the bottom; if you smell toast where none should be, rake coals back from underneath. Done food announces itself: grains burst creamy, roots yield to a stick, meat falls from the bone.
- Take it off the heat gently β the pot is still keeping the one law. Lift straight up with both pads and set it on dry ground, dry wood, or ash. Never on cold wet ground, never splash cold water in: the chilled side shrinks while the hot side does not, and the pot tears β the never-two-temperatures law of the firing pit, now a daily habit. Let it cool before washing.
- Clean it kindly, dry it fully. Rinse with warm (not cold) water and scrub with sand or ash β ash water lifts grease. Leave no scraps in the pores, or the next meal tastes of the last and mould moves in. Dry it completely, mouth tilted down, before storing.
Watch out
- Thermal shock is the pot-killer, and it strikes both ways. Thermal shock is simply one part of the pot changing temperature much faster than the rest: cold pot into hot fire; cold water into hot pot; hot pot onto wet ground; even a cold wind on one side of a very hot pot. Each ends with a sharp tick β clay tearing. The save is pure habit: everything in stages, heating and cooling both.
- A cracked pot near the fire is a doused fire and a lost meal. A fine crack shows early: the ring goes dull, a dark damp line creeps up the outside while boiling, or it hisses faintly. Retire it the day you notice β pots fail mid-boil, at the hottest moment, all at once.
- Boiling does not fix everything. It kills germs; it does not remove chemicals, salt, mud, or rot. Never boil water that smells foul or sits below obvious filth β boiled sewage is sterile sewage β the germs in it are dead, but it is still sewage. Find better water first.
- Stream stones explode. Only dry stones from high ground as pot supports. Water trapped inside a river stone flashes to steam and bursts the stone with real force. If a stone starts hissing in the coals, back everyone away.
- Undercooked beans are still poisonous. Many beans carry natural poisons raw. A hard rolling boil destroys them; a brief warm soak does not β and warmth without a real boil can make the poison stronger, not weaker. When in doubt, boil hard first, then cook longer β soft all the way through, every bean.
- Food left warm goes bad fast. The gentle warmth that cooks food is the warmth germs love. Eat what you cook, or re-boil leftovers hard. Warm soup left overnight by the fire is one of the oldest ways to get sick.
- Hot pots look exactly like cold pots. No glow, no warning. Make it law: any pot near the fire is hot until a hovered palm says otherwise.
How it works
Start with the trick at the heart of it: water can never get hotter than its boiling point. However fierce the fire, once water boils, every extra bit of heat goes into turning water to steam, not into raising the temperature. So a pot of simmering water is a self-regulating oven β hot enough to cook and kill germs, never hot enough to char. Flame burns the outside of food before the inside cooks; the pot holds everything at exactly "done," for hours if you like. A cooking pot is simply a way to hold water inside a fire, and water is the gentlest, steadiest cook there is.
Now look at what that steady wet heat does, because this is why the pot changed the human diet more than almost any tool. Grains and hard roots are packed with tiny sealed grains of starch β energy locked in boxes our stomachs can barely open raw. Hot water makes those grains drink, swell, and burst, turning glassy-hard seed into soft porridge a stomach digests almost completely. Dry beans carry natural poisons as a defence against being eaten; a long boil breaks the poisons apart and turns a dangerous seed into a staple. Bones seem finished after roasting, but hours of simmering melt out the marrow β the soft core hidden inside the bone β and dissolve the joints into rich broth β a second meal hiding in the leftovers. Tough, bitter greens wilt tame, and the juices that roasting drips into the ashes stay in the bowl. Same land, same forage β far more nourishment, soft enough for the very old and the very young. Villages could now feed the people who remember and the people who are next.
The pot itself lives by one law you already know from the firing pit: never two temperatures in one piece of clay. Hot clay swells a little; cold clay shrinks. If the outside of a pot is suddenly chilled β wet ground, splashed water β the outside shrinks while the inside is still swollen, and the pot literally tears itself apart. That is why every rule in this guide is a stage: warm slowly, cool slowly, sides not flame, never empty.
Even the pot's "flaws" are working parts. Seasoning works because starch plugs the pores from within. And an unseasoned water jar sweats on purpose: water seeps slowly through the wall and evaporates from the outside, and evaporation steals heat β so the jar chills its own contents. Unglazed jars keep water cool in summer because the pot sweats to stay cool, exactly like you do.
