Mix mortar, plaster, and whitewash

First, you need: Burn limestone into lime

Lime is one material that does three jobs. Mixed thick with sand, it is mortar β€” the glue that holds stones and bricks into a wall. Mixed with finer sand and spread thin, it is plaster β€” a smooth skin that seals a rough wall against wind and dirt. Thinned with water alone, it is whitewash β€” a bright white paint that dries hard, fights mould, and makes a dark room feel twice as light.

All three are the same trick at different thicknesses. Soft lime paste slowly drinks carbon dioxide, a gas in the air (the same one you breathe out), and turns into limestone β€” the very rock you burned to make it. Mortar does not dry the way mud dries. It cures β€” it becomes stone. You are spreading liquid rock; over the following weeks the whole wall quietly turns to stone around your stones.

This is also why the craft forgives you: a lime wall heals its own hairline cracks and bends a little instead of snapping. Builders trusted it for eight thousand years, and much of what they built is still standing.

Steps

  1. Mix mortar: 1 part lime putty to 3 parts sand. Measure with the same bucket for both (a bucket of putty is roughly ten litres). Chop, press, and beat them together on the board; this beating ("knocking up") spreads the lime glue onto every sand grain and wakes the mix into stickiness, so work it far longer than feels necessary β€” a few hundred strokes. Done: even colour, no white streaks, standing in stiff peaks like thick porridge. Add water only by the splash; a mix that slumps and shines is carrying extra water, and will shrink when that water later leaves. The trowel test: a dollop clings to the upside-down trowel for a breath before falling.
  2. Lay stones with it. Wet the stones first β€” a dry stone drinks the water out of the mortar and starves the cure. Spread a bed about a thumb thick, press and tap the stone down until mortar squeezes from the joint, then scrape off the squeeze and press it back into the gaps. Fill every joint solid; a hollow joint is a rain-pipe into the heart of the wall. When the mortar firms to leather β€” a thumbnail marks it, a thumb no longer sinks in β€” tamp the joints firm with a stick and scrub them over with a stiff brush: packed tight but left slightly open-grained. A trowel-polished skin looks neat but seals out the very air the cure needs.
  3. Mix plaster: 1 part putty to 2½–3 parts fine sand, a little wetter than mortar β€” like soft butter. Dampen the wall. Spread a first rough coat as thick as your little finger, no thicker, pressing hard so it keys into every hollow β€” squeezes into the dips and locks there, the way fingers grip handholds. Before it stiffens, scratch it criss-cross with a stick β€” teeth for the next coat to bite. Let it firm for a day or two until a thumb-press barely marks it but a splash still darkens it, then spread a thinner second coat and smooth it with the wooden float in long, flat strokes. Two thin coats beat one thick one; you will see why below.
  4. Mix whitewash: thin lime putty with water until it looks like milk. It will seem uselessly watery β€” that is correct. Thick whitewash rubs off as powder, because the air cannot cure that deep; a thin coat cures right through, and bonds. A handful of salt, or a splash of boiled hide glue or melted tallow, helps it stick and shed rain.
  5. Brush whitewash on in several thin coats, letting each dry a day. Keep the eye cover on β€” a brush worked overhead flicks caustic drops into upturned faces. It goes on see-through and greyish and looks like a mistake; overnight it cures white. Two to four coats make a bright, even wall β€” inside rooms, over plaster, on animal-shed and dairy walls.
  6. Cure everything slowly and damp β€” this is a chore, not a wait. For the first week, shield fresh work from hot sun, drying wind, rain, and frost with mats or leafy branches. Visit twice a day; if the surface has gone pale and dusty, mist it until it darkens. Lime that dries out before it has cured stays weak forever β€” it must stay faintly damp while it slowly eats air. Firm in days; hard in weeks; full stone strength over a season.

How it works

Lime lives in a circle, and this craft is its homeward half. Limestone is a rock called calcium carbonate β€” calcium bound to carbon dioxide, the gas you breathe out. Burning it drove that gas off and left quicklime; slaking added water. Now, spread on your wall, the paste does the last step: it pulls carbon dioxide back out of the air and turns into calcium carbonate again. Your wall does not dry into hardness. It becomes limestone β€” the same rock you started with, re-grown between your stones as a lace of interlocking crystals.

That is why "keep it damp" is law. The gas cannot react with dry powder; it must first dissolve into a thin film of water inside the paste, and only there does it turn the lime to stone. Bone dry, nothing happens β€” ever. Soaking wet, no air gets in. Faintly damp is the open door. And air creeps inward slowly β€” the stone-front advances at fingernail pace, about as slowly as your nails grow β€” which is why thin coats cure through and thick ones stay cheese in the middle.

Why the sand? Sand is the bones; lime is only the glue between the grains. Lime paste alone shrinks badly as its water leaves, and cracks apart; sand grains do not shrink at all. In a good mix they lean grain against grain like a dry-stone wall in miniature β€” coarse grains framing, fine grains filling the gaps β€” and the lime only fills the last thin spaces and glues the contact points. One part lime to three parts sand is roughly the glue that just fills the voids between the bones. The wall carries its weight through grain touching grain; the lime merely forbids them to slide.

Here is the quiet magic: a lime wall heals itself. Even cured, it keeps a little free, uncured lime. Rainwater dissolves a trace of it, carries it into any hairline crack, and there β€” meeting air β€” it cures into fresh limestone. The crack scabs over with new stone. This, plus a slight softness, is why lime forgives what cement punishes: buildings move with heat, frost, and settling ground; rigid cement cracks through and stays cracked, while lime flexes, breathes damp out through its pores, and re-seals its small wounds. Mud, at the other end, never turns to stone at all β€” rain simply softens it back.

Whitewash is this whole story told one grain thick: each milky coat cures into a paper-thin sheet of limestone. And because fresh lime is fiercely caustic β€” the same bite that burns skin β€” it kills mould and germs on contact, which is why barns, dairies, and sickrooms were painted with it.
